Open two years ago, Le Bistrot*, four star hotel Le Morgane’s restaurant, is managed by the young chef Michaël Bourdillat. His cooking, both simple and sophisticated, led to him being awarded his first star in the Michelin guide at only 37 years of age.

Michaël is in favour of a simple and inventive cuisine. His philosophy is summed up thus: "Everything is on the plate so there’s no need to add anything else." Michaël gets to the heart of the matter quickly and strives to put the taste back into cooking.

In Le Bistrot*, the ingredients come from their area of origin while the vegetables are, of course, those in season. Le Bistrot* serves regional produce that Michaël tracks down himself in the Chamonix Valley as well over the border in Switzerland and Italy.

Driven by his trade and, of course, a demanding gourmet himself, he combines and juggles with different tastes and flavours with talent and creativity.
His attention to detail and his little extra touch guarantee that the food served up is original, full of flavour and surprising. That’s how Michaël Bourdillat has succeeded in making Le Bistrot* one of THE restaurants to experience in Chamonix.

A sophisticated and delicious menu

Sophisticated starters such as parmesan tart and mackerel, crystallized lemon and tapenade (savoury spread made with pureed olives) or fully cooked duck foie gras served cold, gingerbread and apple jelly (€14).

After that, delicious dishes such as fillet of duckling, then asparagus fricassée and peanut crunch or marinated red tuna and crunchy potatoes dipped in virgin olive oil (€19).

Finally, gourmet desserts such as clafoutis framboise (raspberry flavoured batter pudding), gently-fried raspberries and sorbet or crunchy chocolate and caramel (€ 9).
